Soft zucchini and mozzarella muffins: a quick and easy recipe for baby's first meal of weaning. Our little muffins are easy to grab and eat. Baby will enjoy them and get a boost of energy thanks to the zucchini, a vegetable rich in fiber and full of vitamins that stimulates digestion.

This recipe is ideal for making in large quantities. You can then freeze some for days when you don't have time to cook.

  1. The texture seems very melt-in-your-mouth; I can't tell if that's normal or if it needs more cooking. Is it supposed to be melt-in-your-mouth or airy and fluffy like a cake? Thanks for your feedback 🙂
