If your baby is allergic to eggs, you can replace them with a vegetable binder that will maintain the waffle texture. In this recipe, the simplest option is:
Option 1 (the best for this recipe):
1 tbsp chia seeds + 2 tbsp water per egg.
Let it swell for 5 minutes to form a gel, then mix with the cornstarch and cornflour.
This will bind the dough and give it a similar texture.
Option 2 (also very simple):
40g of unsweetened applesauce per egg.
The waffles will be a little softer and slightly sweet, but it works very well.
